I've entered pyweek (For the first time!) as an individual. However, I have a friend who is interested in helping with just the art in a game. Do I have to create a new entry with him listed as a team member?

No, you can add members to your existing entry. Go to the entry page and choose "Manage this Entry". It'll automatically be in the team category if it has more than one member.
