My favored way for writing music is to use a Tracker http://en.wikipedia.org/wiki/Tracker_(music_software) It's better than midi, since you can choose your own samples, and usually render down to wav/mp3, and it's a little bit clearer what is going on than the piano roll or sheet music (in my mind at least) which most sequencers use. In any case, Fruity loops isn't a tracker but it's popular, and there is a demo version. I use registered Renoise, which also has a demo version too.
The best thing about tracked music is, to me, that it sounds quintessentially video-gamey, in a good way. The original unreal tournament used it for instance.
